A piadina is an Italian street-style sandwich.

Fill the lightly toasted bread with whatever your heart desires. Here is a vegetarian and non-veg option.

Vegetarian option slices of pumpkin

Vegetarian option slices of pumpkin

  • Wrap of your choice

  • Rocket

  • Pancetta (Vegetarian option pumpkin)

  • Bocconcini cheese sliced

  • Sun-dried tomato pesto

    • 2 tablespoons of olive oil

    • Half a dozen almonds

    • Half a dozen sun-dried tomatoes

    • 2 tablespoons of parmesan

    • Pepper (no need for salt due to parmesan)

Preparation

  1. Using a blender blitz ingredients for sun-dried tomato pesto.

  2. Slightly warm the wrap on a pan or sandwich press.

  3. Spread the wrap with pesto and on one-half layer all fillings and fold over.

  4. There will be extra pesto to make another if you are still hungry. Enjoy!
