Broccolini, Basil, Almond and Quinoa Salad ~ Meal/Side

When you spot purple broccolini at the market, it screams take me!

Guide

If you can not find broccolini you can substitute broccoli. To be honest you can add anything to a cup of quinoa and call it a meal.

Provisions guide

For one

  • 1 cup of cooked quinoa

  • Broccolini - as much as your heart desires

  • Small spring onion finely sliced

  • Basil leaves ripped or sliced, extra for garnish

  • Half a lemon - for juice and rind

  • 1 tablespoon of olive oil, extra for garnish

  • Toasted flaked almond for topping

  • Broccoli micro herbs (optional)

  • Salt and pepper

Preparation

  1. MIX olive oil, grated lemon rind, lemon juice, basil, spring onion, and quinoa in a bowl

  2. PLACE quinoa mix on a plate, top with broccolini, flaked almonds, micros, and extra basil, olive oil, and lemon rind.

  3. SEASON to taste, eat, and feel your body sing.
